Creamy Tortellini Soup

Hmm, soup again?! Well, yeah I told you all tis the season šŸ˜‰ This soup is one of those that is super easy to throw together if you have all the ingredients ready to go. Total time? 30minutes. No joke! I made it back in October around the time I started feeling sick. In one of those delirious moments where I knew I had to make dinner but I wanted to go back to bed. Yep, there’s really nothing wholesome about this recipe, I’ll admit it. But in the end it’s comfort food. It was good going down and took the chill away, which when you’re sick that’s most important!

Mom and I are really the only ones who love this soup. It lives up to it’s name, it’s creamy, thick, and the chunks of sausage added a good contrast to the cheesy tortellini. If you’re a tortellini fan then this soup is right up your alley! I’ve made other tortellini soups in the past, red and white versions alike(I’m quite partial to the white), but this recipe is truly all mine. So please let me know what you think šŸ™‚

 

Creamy Tortellini Soup

1 large onion, chopped

3 garlic cloves, minced

1 Lb bulk sausage, cooked

1 cup mushrooms, chopped

4 cups chicken stock

2 cups water

2 bags of three cheese tortellini

1 cup heavy cream

1 pkg Country Gravy Mix

Salt and Pepper to taste

In a large dutch oven pot, cook onions, garlic, mushrooms and sausage together. Drain if desired. Add in tortellini and cook until tender, according to package directions. In a 4 cup bowl whisk heavy cream with country gravy mix. Pour into soup and stir to thicken. Adjust seasoning accordingly. Serve with garlic bread and salad.

 

If you like, add some fresh spinach to the soup for a spinach tortellini version. If you really thicken this up you can serve it as a casserole with a lovely roasted chicken on the side. Hope you all enjoy!
