Low Carb Double Chocolate Brownie Smoothie

If you have yet to try the Holy Cow, LC/GF Brownies recipe from this blog then you are missing out, because today’s recipe is centered around those brownies. 


Yesterday on Instagram I shared this image shortly after making the smoothie. I feel compelled to apologize that the cup isn’t filled up all the way. It’s mostly because I’m not a major chocolate fan. But I hope you can over look a half full glass and be tempted to try this amazing recipe!

I know chocolate smoothies tend to be a hit with most folks, personally I think you need a high quality cocoa in order to achieve that decadent, rich, chocolatey goodness that tricks your brain into thinking that you’re being bad only you’re not. Now, my recipe uses vanilla but chocolate can easily be used instead. I prefer to use True Whey Protein Powder, it’s sweetened with Stevia, has 1g net carb per scoop, is soy free(which is important for us PCOS Cysters), and the vanilla flavor works with every flavor of smoothie I have made thus far! 

What you’ll need:

1 1/2 c heavy cream

1 c ice cubes

Almond milk, optional to thin out

2 tblsp unsweetened Ghirardelli Cocoa Powder

2 tblsp Stevia in the Raw

2 scoops True Whey Protein Powder

2  Holy Cow, LC/GF brownies

Other add ins:

1/2 tsp peppermint extract

Low carb chocolate sauce, drizzled

Whipped cream, on top

Dark chocolate nibs, garnish

Directions

In a blender, add all the ingredients minus the brownies, and use the ice crush setting. If it gets too thick, add a splash of almon milk to thin out. Add brownies and other optional add ins; pulse a few times to incorporate completely. Portion out into your favorite glass(es) and enjoy! 

My nephew wanted a mint flavor, so in his glass I added a few drops of peppermint extract into his cup. My mom tried a spoonful and was blown away by how much it tasted just like the brownies(she’s my blueberry smoothie fan). Even G-Man was impressed and I can barely get him to have anything but a strawberry smoothie.

Peach Strawberry Melba Smoothie

Well, we survived the storms last night. Lots of lightening, flash flood warnings and for some of my local friends the tornado sirens went off. While it’s a gloomy looking day, with possibly more rain on the way, there’s a silver lining 🙂

Today I wanted to highlight a vintage recipe in a modern way. The Peach Melba, so aptly named after the opera singer Nellie Melba, has had a few face lifts over the years since it’s original creation. Other fruits have been added for one reason or another, and today’s recipe is a spin on a recipe I found in the wee hours this morning. I wanted to harness the old flavors of yesteryear and add just enough of a spin to make it my own.

After our 4th of July family get together, some peaches were left behind and have been getting riper with each passing day. My son ate one yesterday with his lunch and had it eaten up to the pit in less than three minutes. I’m not sure but I think he liked it! So this morning I knew something needed to be done with them, when I woke up the only thing that kept coming to mind was a peach Melba. Why I don’t know. I’ve never had one before and yet for some reason it was the only thing I knew that would be perfect for this Throw Back Thursday post. Sure other recipes have since come to mind, peach cobbler being my Dad’s favorite, but since there are plenty of peaches to be had I figured using a couple for today’s recipe wouldn’t take away from any future desserts. With the remaining peaches we can freeze them and keep them for Labor Day or my Dad’s birthday 🙂

Now, a peach Melba is traditionally served with a raspberry sauce/puree. We don’t have any raspberries but I do keep strawberries in the freezer for smoothies and baking purposes. I did some reading and found that current jelly can be warmed up and used as well. Another alternative flavor would be triple berry (blackberry, raspberry, blueberry).

Peach Strawberry Melba Smoothie

Yields 4 servings

6 ounces frozen strawberries, thawed or use fresh

1 Tblsp stevia in the raw or sugar

1 1/2 cup chopped fresh peaches

2 cups milk or cream

1/8-1/4 cup stevia in the raw

In a blender add thawed or fresh strawberries. Puree and pour into a fine mesh strainer lined bowl. Using a spatula force the puree through the mesh strainer. Scrape out refuse, sweetened strawberry puree liquid with stevia or sugar. Set aside.

Rinse blender and add peaches, milk, and stevia. Blend until thick. Adjust sweetness according to taste. Pour a little peach smoothie into a clear glass, add two tablespoons of strawberry puree. Pour more peach smoothie and top off with two more tablespoons of puree. Give a gentle stir with knife or straw and serve!

My son wasn’t too sure of this at first, in fact he was against trying a peach smoothie. He’s a hardcore strawberry lover, after I poured the first glass he finally came around to trying it. He just finished his second small glass and I quote “it was good!” That is high praise indeed! It’s almost like a dessert in a glass, very yummy. If you want it thicker and creamier use heavy cream instead of milk, you could add some peach yogurt it you like.
