Smooshy Potatoes

Don’t let that title fool ya, they are actually the most amazing thing I’ve been making the last three weeks! Lol no joke! We have been having quite a wild ride the last few weeks. From family members getting sick to my parents bathroom flooding. And the fun has not stop there! Their bathroom is now gutted and hopefully, fingers and toes crossed, we will have someone out next week to being the renovation. On top of that I am no longer a Jamberry Consultant, truth be told I wasn’t happy when I was selling it. The whole point of having a home-based business is that you’re doing something that you love, right? I haven’t fallen out of love with the Jamberry products, they are the best thing I’ve ever used, I just had to stop deluding myself when it came to selling them. 

I’m on a new path and one that I had been putting off for many years out of fear, fear that no one would want to ever try or that I could actually make a living off of. I’ve started baking cookies this month, first just out of appreciation for National Cookie Month, but now it’s blossomed into this passion that I pray never goes away. For now, I am calling it Night Owl Kitchen Bakes…here’s a sample picture of what I did earlier this week…

  

At the moment my customers are local and mostly from church, have to start somewhere 😊 So now you know why I haven’t posted in forever, been really busy! It’s going to be interesting to see where this new venture is going to take me 🙂 Perhaps a small kitchen with a little window service! Possibilities are endless, and yes this is something I absolutely love doing! For me, cooking and baking are therapeutic. I am most relaxed when I have a recipe in front of me and yummy wholesome ingredients to create with!  

Ok, back to the potatoes 😉We also call them smooshed potatoes, but first a little back story on the name…

See, three weeks ago my Mom was sick with a cold and askd me to make her a baked potato, smoosh it and add butter, shredded cheese and sour cream to it. Cool, so I did what I always do:nuke the potato first to help cut down on the baking time and to make sure it would be done all the way through. After going through the microwave I took a small toaster oven pan and did what she said, I smooshed the potato, covered it in butter and baked it for 15 minutes. Transferred it to a bowl, added cheese, salt, pepper, and sour cream. She said that was the best potato she had had! Granted food always tastes better when someone else makes it 😉 

That night for dinner I was a tad stumped on what to make, yes that happens to me even when I have a planned out menu. I look at the menu and think, nah not in the mood to make that. That’s when I decided to make smooshed/smooshy potatoes. 

  

I figured I should go ahead and share this recipe, I’ve made it about half a dozen times now lol!!! Last night I decided to serve it up with a simple salt and pepper chicken, turkey kielbasa sausage, and fire roasted corn with black beans. This recipe will work for any number of potatoes, one, twenty…and the leftovers are super yummy the next day! 

Smooshy Potatoes

10 yellow potatoes, washed

2 sticks of butter, melted

1 tblsp garlic powder or three cloves minced garlic

2 tblsp dried parsley

Rach seasoning

Preheat oven to 375 degrees, line baking sheet pan with Reynolds Release Foil. 

Take your washed potatoes and with a sharp knife cut slits down the length of the potato. This will help with the cooking and smooshing process. Place all the potatoes on a large microwave safe plate and cover with a paper towel. Choose the potato setting on your microwave and let it go until the potatoes are mostly cooked through. (Our microwave has a sensor built in, this is why I don’t have an accurate time for this. It varies on how many potatoes I cook.) Please be careful when removing the plate from the microwave, it will be hot. Set the plate aside and melt the butter with garlic and dried parsley. Now you are ready to assemble! 

If you don’t have a meat tenderizer, or as I affectionately call mine “the mallet”, then you can use a small saucer or the back of a heavy sauce pot. Move hot potatoes to foil lined pan and begin smooshing them just enough until they flatten out.

If your potatoes look like the ones in the picture, then you may proceed with the recipe. If your potatoes are too firm to smash down, then they need to take another ride in the microwave. 

Spoon or pour the garlic parsley butter over the potatoes, evenly. Now, sprinkle the ranch seasoning over the potatoes and place in the oven for 35 minutes. Less time if you are baking fewer potatoes. While that’s baking, you can go ahead and prepare the rest of your meal. 

 

This is what I use, can also be purchased in packets.

 

The fire roasted corn is purchased from Sam’s Club over in the frozen food section. All I did was open the bag, sprinkle garlic powder over it, added four pats of butter and covered it with a paper towel before cooking it in the microwave for six minutes. 

Once your potatoes are done you can serve them up however you like:: butter, shredded cheese, sour cream, chopped bacon, salsa, or just keep it simple and add a little gray sea salt on top. 

These are scrumptious, so easy to make and dinner was ready in about 45 minutes! Can’t beat that when it involves potatoes 😉 I hope you all enjoy this recipe and that it inspires you to try other flavors on them(cajun seasoning, lemon pepper, mexican seasoning, or any of the Mrs. Dash flavors would work).

What a Fun(yun) Day

Evening all, not many of you knew it but yesterday was my birthday 🙂 Turned 32, yes can hardly believe it myself. I sat for a while in my bathroom just staring at myself remembering what it would be like to be in my 30’s…alright I didn’t really ponder on that in a deep way but I did think wow, you’re 32 years old today. Then I brushed my teeth and went off to school with my boy 🙂

It was a great birthday, a lot of wonderful friends and family remembered me and wished me the best on Facebook, even got a card from a sweet older woman from my church(it’s so nice to be thought of). I don’t make a big deal about my birthday anyway, don’t advertise it or expect anything special(ie big parties, a week long celebration, or outlandish gifts). I’m content with just being home with the family, thankful for another year, for my son, my salvation, and just being able to live to enjoy life. So, this year wasn’t any different. I woke up and made my own breakfast(no yeast cinnamon rolls…very yummy by the way), did some school work with G–Man, and came down from our bonus room to find my Mom making me the cake I said I would love to have. My oldest nephew had taken care of the dishes so all I had to do was sit and enjoy my day! It was nice not having to do anything for a little while, even got to enjoy a few rounds of bingo on my ipod 🙂 Yes, I’m a huge bingo addict, it’s all for points and not money. Just pure fun!

Usually for my birthday I choose some low carb, alkaline, gluten free options that everyone moans and groans about. “It’s one day a year”, “do something special”…so I did. Something I figured everyone would enjoy and not break the bank at the same time. Went to the Domino’s website, checked out their coupons, scored some deals and got a little something for everyone! Dad even spoiled us with sodas, which we rarely drink and I haven’t had in years, even got us our favorite chips…funyuns oh how I have missed you! But the best part of the entire evening was the cake that my Mom had wore herself out in making. It’s an absolute rich and moist cake, so delicious!

Italian Cream Cheese Cake

(Recipe courtesy of Southern With A Twist)

1 stick Butter
½ cup Crisco
2 cups Sugar
5 Egg Yolks
2 cups Plain Flour
1 tsp Baking Soda
1 cup Buttermilk
1 tsp Vanilla
1 cup Coconut
1 cup chopped Pecans
5 Egg Whites, stiffly beaten

Cream butter and Crisco. Add sugar, beat well. Add egg yolks and beat. Add flour and soda. Alternate with buttermilk. Stir in vanilla. Add coconut & nuts. Fold in stiffly beaten egg whites 2 Tablespoons at a time. Pour into greased and floured 9 in cake pans and bake at 350 for 20 – 25 min or until toothpick comes out clean. Cool and frost with cream cheese frosting.

Frosting:
1 – 8oz Cream Cheese, softened
½ stick Butter, softened
1 box 10x Sugar (1 pound of powdered sugar)
1 tsp Vanilla
Chopped Nuts, optional

Mix cheese and butter, add sugar and vanilla. Frost Cake and sprinkle nuts on cake.

Like I said, it’s a rich cake and that was unexpected. Mom did a superb job making this for me 🙂 Her helper, JJ, did an awesome job lending a hand and doing the dishes as well! As I told my folks tonight, they are excellent cooks and made this owl’s b–day a really good one! Give this cake a try, it pairs wonderfully with a caramel turtle tracks ice cream!

Baking Soda: Going Beyond the Cookbook

Good morning everyone! Hope your day has been fantabulous so far 🙂  I have several irons in the fire here lately, coming down on the wire with a few projects and posts to share, so exciting and I can’t wait to get it up here for everyone to enjoy 🙂

Today I wanted to share some info about baking soda and all it’s usefulness. It’s not just for cooking or putting out fires, there’s so many handy dandy uses for this bitter powder. I have used it for a number of things, other than for Irish Soda Bread (that’s for another post). The most recent way I’ve used it was on a burn. Even a seasoned cook/baker as myself will have accidents in the kitchen but the best way I have found to stop the burn from hurting is to apply a baking soda paste! I know, you’re thinking back to health class and the textbook saying never apply baking soda to a burn, granted if you have burned the skin away you wouldn’t want to do that. Seek medical attention for such a burn, but for minor burns this remedy works great!

Applying a paste made out of baking soda will help to lessen the damage and relieve pain. To do this, mix 1 tablespoon of soda with 1 teaspoon of water, put the paste on the burn and wrap it loosely with a clean bandage. A baking soda bath can also be helpful. Simply add a quarter to a half cup of baking soda to a warm (not hot) bath and soak.

Taking a soda bath wasn’t necessary. However, I did have reapply the paste before going to bed. Even from the first application of the baking soda paste the pain was instantly gone! I had kept my thumb on ice for a couple of hours and ever time I took it off my thumb would burn and throb. The next day the redness was minimal and the area that would have become a blister was flat. My thumb was tender for a couple of days and I noticed that my skin was peeling in that area several days later. So, for minor burns definitely try baking soda paste never again will I use an ice pack.

But the amazing uses don’t stop there. I came across an article with 75 ways to use baking soda, yet I know there are so many more! Amazon has book called “Baking Soda: Over 500 Fabulous, Fun, and Frugal Uses You’ve Probably Never Thought Of“, it’s on sale and is available with Prime two-day shipping. 

I love cleaning with it too! It’s great for making jewelry sparkle, both silver and gold, no need to spend money on those expensive jewelry cleaners. I shared a simple recipe on the Night Owl Kitchen Facebook Page, so if you missed it here it is:

1 tablespoon salt
1 tablespoon baking soda
1 tablespoon dish detergent
1 cup water
1 piece aluminum foil

Directions:
1. Heat water in the microwave for 1 or 2 minutes.
2. Cut a piece of aluminum foil that roughly covers the bottom of a small bowl (like a cereal bowl).
3. Pour hot water into bowl. Place salt, soda, and dishwashing liquid into bowl. Place jewelry on top of foil and let it sit for 5 to 10 minutes. Rinse jewelry in cool water and dry jewelry completely with soft cloth. Discard solution after use and make a new batch next time.
4. According to wire-sculpture.com, “this works well for gold-filled, brass, german (nickel) silver, and sterling silver. I have even cleaned jewelry with freshwater pearls, shell cameos and mother of pearl with no problem.”

I have used this on my silver jewelry and the pieces look brand new. I have also used it in the bathroom, especially the boys bathroom. It helps to deodorize and it’s great for freshening up the sink in the kitchen! Root Simple(click here) has some great tips to use baking soda and even some interesting ways to apply it. I especially found her application of it in the bath tub/shower informative. How many of us actually use homemade bathing products? I certainly don’t, but should, it’s a nice thought and I love buying such products from people who take the time to make them. I’m as guilty as the next person when it comes to buying products off a shelf and grumble over the soap scum and strange red residue that forms around the shower drainer. Seriously, it’s disgusting! However, Mrs. Homegrown, points out that using homemade products won’t leave a soap scum film in the shower or tub which makes for easier cleaning! I think that has sold me lol Anything that cuts my cleaning time is a good enough reason to change!
